The grapes were harvested in the cool of the night to preserve freshness and retain maximum flavour. The juice was cool fermented in stainless steel with a neutral yeast strain to bring out the inherent varietal flavours. The wine was held on yeast lees to preserve freshness and soften, then bottled with a refreshing bubbly spritz.

Bulloak
The Bulloak range was named after the northern most stand of Bulloak (Buloke) trees which are situated on the Zilzie property overlooking the vineyards and winery.
The Forbes family donated this land back to the Department of Sustainability & Environment to protect the Bulloak trees and natural bio-diversity of the region for future generations.
