The fruit was picked in the cool of night to retain
optimum freshness and quality. Each batch underwent
cool fermentation in stainless steel, followed by lees
stirring to enhance texture and palate length. The wine
was then blended, stabilised, rested on lees, and finally
filtered before bottling.
About the range
Bulloak
The Bulloak range was named after the northern most stand of Bulloak (Buloke) trees which are situated on the Zilzie property overlooking the vineyards and winery.
The Forbes family donated this land back to the Department of Sustainability & Environment to protect the Bulloak trees and natural bio-diversity of the region for future generations.
