Tasting Notes
Our Adelaide Hills Fiano is an enticing example of this ancient variety, with its lifted lemon custard, spring blossom and peach aromas. The delicious combination of fleshy white tropical fruits and delicate biscuit-like notes is balanced by a fine line of vibrant citrus acidity.

Pale straw.
Aroma
Lifted lemon custard, white blossom and peach.
Palate
White tropical fruit, vibrant citrus with underlying lees and biscuit notes. A balanced acidity maintains length and interest along the palate.
Food Match
Seared red snapper with rosemary potato medley, or lemongrass, coriander and tofu stir-fry.
Winemaker Notes
Harvesting the fruit during the cool of the night preserved its freshness and quality. After gently pressing, we employed minimal fining agents to maintain the natural vibrancy and structure of the variety. The inclusion of old barrel fermentation with natural yeast strains, along with further maturation on yeast lees, created layering in this wine, generating subtle creaminess to balance the great natural acidity from this vintage. Subsequently, we blended, stabilised, and filtered the wine prior to bottling.
