The 2021 Zilzie Limited Edition Shiraz is immediately expressive and fragrant, carrying the scent of divine dusty oak. Dark caramel, char, and chestnut with dusty oak and subtle black pepper.
Palate
The palate offers a savoury complexity, brimming with vibrant blackcurrant, dark chocolate, and violets. Alongside this, consistent layered tannins provide structure, while notes of cedar and winter spice contribute to a well-rounded finish.
Food Match
Stuffed portobello mushrooms, enhanced with a balsamic glaze, or, alternatively, a braised lamb shank enriched with an herb-infused jus.
Winemaker Notes
Carefully selected fruit from McLaren Vale's premium vineyards first underwent cold soaking and subsequently experienced skin fermentation in open fermenters. Following this, and after malolactic fermentation, the wine was then allowed to mature in 100% barrique, with 75% new oak. This process, conducted prior to bottling, culminated in a finely crafted wine
