Tasting Notes
Ageing in new and old oak for 12 months, our Limited Edition Riesling has a lively textural palate layered with white florals, slate, native finger limes and subtle nutty oak. Light peppery phenolics with a consistent line of vibrant citrus and acidity make this the perfect wine to enjoy now or be rewarded by further cellaring.
Colour
Pale to medium straw.
Aroma
White florals, slate, regional lime and nutty soft oak.
Palate
Layered palate with the inclusion of soft oak, balanced with light peppery phenolics. Consistent acidity line, citrus and great potential for additional interest with aging.
Food Match
Fresh scallops and garlic butter, cheese platter, or wild mushroom risotto.
Winemaker Notes
The night's coolness preserved the fruit's freshness and quality during harvesting. After gently pressing, minimal fining agents maintained the variety's natural vibrancy and structure. Layering in this wine resulted from old barrel fermentation with natural yeast strains and further maturation on yeast lees, generating a subtle creaminess that balanced the excellent natural acidity from this vintage. Finally, the wine underwent blending, stabilising, and filtering before bottling.
